There’s just something about being in the kitchen that seems therapeutic during these times. Cooking and baking brings a sense of accomplishment and food is the ultimate comfort. We have been upping our food game during quarantine and thought it might be fun to share some of our favorite recipes.
Easy Everything Bagels
These bagels are simple, easy, and delicious. I am admittedly a bit of a bagel snob (nothing like a New York bagel!) so I was apprehensive about these. But I was blown away by how delicious these turned out to be. The texture is perfect - crispy and crunchy on the outside and chewy on the inside. I made Everything bagels because I had Everything seasoning on hand, but these could easily be Sesame or Onion or any combination of herbs and spices you have on hand. Get the Recipe
Honey-Sweetened Almond Chocolate Chip Granola Bars
This granola is a great alternative to the store-bought stuff. It’s quick and easy to make, plus it’s healthy! One batch lasts the whole week for 2 people, and it’s great to have for breakfast or as a snack throughout the day. The chocolate chips add the perfect amount of sweetness, while the almonds and peanut butter perfectly balance out the flavors. The best part about granola? If you don’t have all the ingredients on hand, don’t worry! There are plenty of substitutes you can use to make something delicious. I leave out the cinnamon as I’ve found it to be overpowering. Overnight Cinnamon Rolls
I love everything I’ve ever made from Sally’s Baking Addiction! And these overnight cinnamon rolls are no exception. This was my first attempt at cinnamon rolls, and this recipe was easy to follow and very thorough. The end result was dynamite fluffy, buttery, soft and delicious cinnamon rolls that were a perfect weekend breakfast! Pro tip: plan ahead with this one. Total rise time is a minimum of 10 hours (and you don’t want to stretch it beyond 12 hours rise time or they’ll be over proofed), so unless you want to be finishing them up at 1 a.m. like I was, plan it out so that you can pop them in the oven first thing in the morning.
